It’s no secret that vanilla is one of the most well-loved flavors in the world — we eat it with ice cream, enjoy a subtle flavor in its own right, and make cakes and pies with it. There were two specific people who helped to give vanilla its fame: Dr. Augustin Lassen and Terence McGovern.
In 1828 in France, Dr. Lassen discovered vanilla while treating the wife of the Mexican ambassador to France, who was suffering from an illness. She could not eat anything that didn’t taste like vanilla; this is what led Dr. Lassen to experiment with vanilla and its use as a food flavoring.
Ten years later, Terence McGovern became a coffee merchant in Indonesia and India. When he was going through Mexico on his return voyage, he was told about the wonderful flavor of vanilla. He noticed that it was sometimes used on chocolate items and decided to try it out for himself by making ice cream with it. From there, his ice cream business began to grow. McGovern traveled all over the world, spreading the word about vanilla.
The first commercial vanilla plantation in Mexico was established in the year 1780 and it didn’t get its name for a few more years — it was named “Vanilla de Chiapas,” or “Chiepah” because an indigenous woman had given it that name when her husband, who was a doctor, had planted a cardamom bush there on their land.
After they were forced out of their home by Barrington’s men — who were looking for gold mines — the Mexican government sent Dr. Augustin Lassen to find out why the indigenous population had risen so rapidly. This is how he discovered vanilla and its wonderful flavor.
By the year 1900, vanilla was being cultivated all over the world and in 25 years, it became the most well-known flavor in the world. Mccormick & Company bought a whole estate of vanilla beans to make their own unique extract that would be pure and delicious and continue to be used during all cooking endeavors.
