Yes, you can. Here are the instructions:
– Put the dough hook inside of your mixer bowl and put pourer of water on top of your bowl. This is to keep it from overheating while mixing even if you turn the speed knob all the way down (as described below in option 2).
– While holding the dough hook, let it move back and forth just a couple times in a circular motion until smooth dough is created. If you think you need more or less flour for kneading, add or reduce accordingly with your flour pourer. This process only takes about 30 seconds so don’t be afraid to go a little faster or slower if needed. If you don’t have a pourer, you can also just fill it all the way up with flour but I find that is messy and takes time to dump in the exact amount you need.
– Remove from bowl and let rise as usual. Then put it back on your mixer and turn it onto low/speed 2 and let it run for about 15 minutes. The water inside of the mixer will create steam which will make a softer, more pliable dough if needed.
